This extremely healthy slaw is not only delicious, it provides essential nutrients, antioxidants and fiber that your body needs for:
Building muscle tissue

Promoting healthy gut bacteria growth to combat anxiety, depression, and other mental health issues

You can also make this creamy by substituting the olive oil with some Icelandic or Greek yogurt.
You can modify the flavors using different spice and herb combinations, or replacing the sunflower seeds with some other seed.
1 bunch of broccoli
1/2 to 1 small head of red cabbage
1/2 to 1 8 oz bag of shredded carrots (or shred your own, about 2 cups shredded)
Juice of 1 medium to large lemon
Extra-Virgin Olive Oil to desired consistency
2-3 Tbl Chopped fresh cilantro
2-3 Tbl Chopped fresh parsley
Salt and Pepper to taste
Roasted unsalted Sunflower Seeds to taste (when ready to eat so they don’t lose their crunch)
Chop the veggies, mix with the lemon juice and herbs.
Slowly add olive oil until the taste and consistency are as desired.
Season with salt and pepper.
When you are ready to eat, sprinkle sunflower seeds on top.
