Superfood Energy Bars or Balls
These are not ordinary! This is one of our favorite on-the-go snacks and are high in protein, antioxidants, fiber, nutrients, and healthy fats.
They travel a bit better when they are made on the dryer side. Put them in a reusable or biodegradable snack bag.
Experiment with which nut and seed combinations that sound appealing to you.
The goal is to have something nutritious that either fuels your activity, holds you over to your next meal, or is a delicious dessert (try drizzling some local honey or your other favorite treat over the top if you are having this for dessert).
- 1 cup walnuts
- 1/3 cup ground flax seeds
- 1/3 cup hemp seeds
- 1/4 cup cacao nibs
- 1/4 cup coconut flakes
- 3/4 cup pumpkin seeds
- 1/2 cup raisins
- 1 cup dates
- 1-2 tablespoons melted coconut oil, if needed
Throw the dry ingredients in your food processor, then add the dates and raisins and process until everything starts to stick together. If too dry, add more dates or coconut oil.
Take the mixture out of the processor and mix together in a bowl with your hands. Press into a lined pan and set in the fridge for an hour or more. Cut into bars or create balls with 1-2 tablespoons of mixture.
Can be stored in the fridge for up to one week, or freeze for up to two weeks.
